Chocolate Muffin Recipes

Here are a few different recipes for chocolate muffins - mmmm enjoy!

CHOCOLATE FLAX SEED MUFFIN RECIPE

1 cup flax seed meal
1/2 cup whey protein powder (chocolate flavor)
1 T. cocoa powder
4 T coconut oil
1/4 cup splenda
1 T stevia
2 large eggs, lightly beaten with fork in bowl
2 t. baking powder
2 t. maple extract (artificial is fine)
1/2 t. salt
2 oz chopped almonds (optional)
1 cup water

This uses flaxseed meal and coconut oil and makes for really filling, high-protein muffins. It uses Splenda but you can use same of sugar. Mix ingredients and let stand for 3 minutes while you spray a 12 muffin pan with non-stick spray. Then spoon in the batter and bake 25-30 minutes at 350 F.

EASY PUMPKIN CHOCOLATE MUFFIN RECIPE

1 box devil's food cake mix
1 15 oz. can solid pack pumpkin

Preheat oven to 400F/200C. Mix the two ingredients together in a bowl. The mix is very thick, but don't get tempted to add any eggs, oil or water...

Spoon the batter into muffin pans lined with paper muffin cups or spayed with non-stick cooking spray. Bake at 400 degrees for 15-20 minutes. Do not overcook. Start checking at around 10 minutes and using a toothpick to check the middle is cooked.

We do chocolate/pumpkin muffins pretty regularly around here and they are excellent. It means possibly bulk buying  canned pumpkin if it's usually in short supply in your area. You can add chocolate chips if you want to...

MILD CHOCOLATE MUFFIN WITH TOFU RECIPE

I made these muffins the other day. They are really easy to bake. Not as rich as most cholate muffin recipes, but still chocolaty enough. Even more delicious with peanut butter and choc chips if you want to add these to the mix. Otherwise its a healthy mild chocolate muffin recipe  for an awesome on-the-go breakfast!

1 block soft tofu
2 c sugar (sub half Splenda or try cutting sugar to 1 cup and see if you like it.)
1 3/4 c flour
3/4 c cocoa powder
1.5 tsp baking powder
1.5 tsp baking soda
1 tsp salt
2 tsp vanilla
1/2 c water

Mix dry ingredients together then fold in tofu and vanilla until dry ingredients are moistened. Add the water. If batter is stiff you can add half a cup of plain yoghurt if you prefer. Fill lined or greased muffin cups . Bake 30 minutes at 350.

Healthy Ingredient Substitutions

For any muffin recipe you  can easily substitute oil (eg grapeseed or macadamia) for margarine or butter, and use yogurt in place of buttermilk (all you need is something a little acidic). You can substitute apples, apple juice,  apple sauce, licorice, natural vanilla, or splenda to sweeten yet reduce sugar. Dutch processed cocoa powder is better than chocolate. Whole wheat flour, rolled oats, cooked white/brown rice and shredded coconut make your  muffins more nutritious and filling but won't suit when you cooking for guests!
